Ingredients

For the cake

  • 1 box chocolate fudge cake mix
  • 1 cup Dr Pepper (not diet)
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 can (21 oz) cherry pie filling

For the cherry buttercream frosting

  • 1 cup unsalted butter, softened (2 sticks)
  • 3 cups powdered sugar
  • 1/4 cup maraschino cherry juice (from the jar)
  • 1 tsp vanilla extract
  • chopped maraschino cherries for topping Optional

Instructions

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • In a large bowl, mix together cake mix, Dr Pepper, oil, eggs, and vanilla until well combined.
  • Gently fold in the cherry pie filling.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely before frosting.

Frosting

  • Beat softened butter until light and fluffy.
  • Gradually add powdered sugar, one cup at a time.
  • Mix in cherry juice and vanilla until smooth and pink.
  • Spread the frosting over the cooled cake and top with chopped maraschino cherries if desired.

Notes

Chill before serving for a firmer texture and deeper flavor. Pair with a cold glass of Dr Pepper for the full experience! Great make-ahead dessert—just store covered in the fridge.
