These butterscotch chewies are soft, buttery bars with a rich caramel-like flavor and just the right amount of chew. Perfect for bake sales, coffee breaks, or sweet tooth emergencies.
Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
In a bowl, mix melted butter and brown sugar until smooth.
Add the egg and vanilla, and stir until well combined.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually stir the dry ingredients into the wet mixture.
Fold in the butterscotch chips.
Spread the batter evenly into the prepared baking pan.
Baking
Bake for 20–25 minutes, or until the top is golden and a toothpick comes out with just a few moist crumbs.
Cool completely before cutting into bars.
Notes
Want extra chew? Slightly underbake them and let them set as they cool. Add chopped nuts or a sprinkle of sea salt on top for a twist. Serve warm with a scoop of vanilla ice cream for dessert heaven!
