Ingredients

Batter Ingredients

  • 1/2 cup unsalted butter, melted 1 stick
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  • In a bowl, mix melted butter and brown sugar until smooth.
  • Add the egg and vanilla, and stir until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually stir the dry ingredients into the wet mixture.
  • Fold in the butterscotch chips.
  • Spread the batter evenly into the prepared baking pan.

Baking

  • Bake for 20–25 minutes, or until the top is golden and a toothpick comes out with just a few moist crumbs.
  • Cool completely before cutting into bars.

Notes

Want extra chew? Slightly underbake them and let them set as they cool. Add chopped nuts or a sprinkle of sea salt on top for a twist. Serve warm with a scoop of vanilla ice cream for dessert heaven!
