Ingredients

For the Chicken and Veggies

  • 2 lbs Chicken Breasts cut into bite-sized pieces
  • 2 medium Zucchini fresh preferred
  • 1 cup Cherry Tomatoes halved
  • 1 medium Red Onion thinly sliced
  • 3 cloves Garlic minced

For the Seasoning and Oils

  • 2 tablespoons Olive Oil extra virgin optional
  • 2 teaspoons Dried Oregano or Italian seasoning
  • 1 teaspoon Dried Basil fresh preferred
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground recommended
  • 1/4 teaspoon Red Pepper Flakes optional

For the Cheesy Topping

  • 1 cup Mozzarella Cheese or feta for tanginess
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup Fresh Parsley for garnish

Instructions

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil.
  • In a large bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Toss with olive oil and season with oregano, basil, paprika, salt, pepper, and red pepper flakes.
  • Spread the chicken and vegetable mixture evenly in the greased baking dish. Sprinkle mozzarella and parmesan cheese on top.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  • Garnish with fresh parsley and serve warm.

Notes

Optional: Add a squeeze of fresh lemon juice right before serving.
