Ingredients

  • 1 cup butter
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter

Instructions

  • Grease a 9×9-inch square pan and set aside.
  • Melt butter in a large saucepan over medium heat.
  • Stir in brown sugar and vanilla extract until combined.
  • Reduce heat to low, add oats, and cook for 2–3 minutes, stirring constantly.
  • Press half of the oat mixture firmly into the prepared pan.
  • Melt chocolate chips and peanut butter together over low heat, stirring until smooth.
  • Pour chocolate mixture evenly over the oat base.
  • Crumble remaining oat mixture on top and gently press down.
  • Cover and refrigerate for 2–3 hours or overnight until set.

Notes

Allow bars to sit at room temperature for a few minutes before slicing for cleaner cuts.
