Ingredients

  • 1 lb ground beef, crumbled
  • 1 yellow onion, diced
  • 3-4 lbs potatoes, peeled and sliced into 1/4-inch rounds
  • 8 oz shredded cheddar cheese
  • 1 can cheddar cheese soup
  • 12 oz evaporated milk or whole milk
  • 0.5 cup regular milk
  • 1 tsp salt
  • 0.5 tsp pepper

Instructions

  • Preheat oven to 350°F and spray a 9x13-inch baking dish with non-stick spray.
  • Cook the ground beef and diced onion until browned. Drain if needed.
  • Slice potatoes into 1/4-inch rounds.
  • Layer sliced potatoes, season lightly, add one-third beef mixture, and one-third shredded cheese.
  • Repeat two more times, ending with a final layer of cheese.
  • Whisk cheddar soup, evaporated milk, and regular milk. Pour over casserole.
  • Cover tightly with foil and bake for 1 hour.
  • Remove foil and bake 15 more minutes to brown the top.
  • Let rest 5–10 minutes before serving.
