Ingredients

  • 8 oz fresh pureed strawberries
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup vegetable oil
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 lemon zest
  • 1/4 cup sour cream
  • 2 cups powdered sugar
  • 1/2 lemon juice
  • 1/2 cup freeze-dried strawberries, crushed

Instructions

  • Preheat oven to 375°F. Grease a 9×5 loaf pan and line with parchment paper.
  • Beat sugar and eggs until pale yellow.
  • Slowly drizzle in oil, then mix in strawberry puree and vanilla.
  • Whisk flour, baking powder, baking soda, salt, and lemon zest in a bowl.
  • Fold dry ingredients into wet mixture.
  • Stir in sour cream gently.
  • Pour batter into pan and bake 50–60 minutes.
  • Cool in pan 5 minutes, then transfer to rack.
  • Mix powdered sugar and lemon juice to create glaze.
  • Drizzle glaze over cooled loaf and top with crushed freeze-dried strawberries.

Notes

For deeper flavor, use ripe strawberries and allow the loaf to cool fully before glazing.
