Ingredients

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.5 tsp chili flakes
  • 4 eggs
  • 4 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 0.25 red onion
  • 2 tbsp olive oil (dressing)
  • 1 tbsp lemon juice

Instructions

  • Season chicken with olive oil and spices, then grill for 5–6 minutes per side until cooked through.
  • Boil eggs for 7 minutes, transfer to ice water, peel, and slice in half.
  • Combine lettuce, tomatoes, cucumber, and red onion in a large bowl.
  • Top salad with sliced chicken and jammy eggs.
  • Whisk dressing ingredients and drizzle over salad before serving.

Notes

Keep dressing separate for meal prep and add just before serving.
