Ingredients

  • 4 pieces chicken leg quarters
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 0.33 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 cups white rice
  • 4 cups water
  • 0.5 tsp salt for rice
  • 4 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 piece cucumber
  • 0.25 piece red onion
  • 2 tbsp olive oil for salad
  • 1 tbsp red wine vinegar

Instructions

  • Whisk olive oil, garlic, honey, soy sauce, vinegar, salt, pepper, paprika, and oregano.
  • Place chicken in baking dish, pour marinade over, and roast at 400°F for 40-45 minutes, basting halfway.
  • Cook rice by simmering in water and salt for 15-18 minutes, then rest and fluff.
  • Mix lettuce, tomatoes, cucumber, onion, olive oil, vinegar, salt, and pepper.
  • Serve chicken over rice with salad and drizzle extra sauce on top.

Notes

Baste chicken halfway through cooking for best flavor. Let rice rest before fluffing for perfect texture.
