Instructions
Preheat oven to 350°F and grease a loaf pan.
Mix flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice.
Combine carrots, eggs, oil, milk, and vanilla in another bowl.
Add dry ingredients to wet ingredients in two batches and mix gently.
Stir in chopped walnuts.
Pour batter into prepared pan.
Bake for 55–60 minutes until a toothpick comes out clean.
Notes
Do not overmix the batter to keep the bread soft and tender.
