Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1.5 tsp baking soda
  • 1.5 tsp cinnamon
  • 1 tsp salt
  • 0.5 tsp pumpkin pie spice
  • 2.5 cups grated carrots
  • 3 large eggs
  • 0.75 cup vegetable oil
  • 0.25 cup milk
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts

Instructions

  • Preheat oven to 350°F and grease a loaf pan.
  • Mix flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice.
  • Combine carrots, eggs, oil, milk, and vanilla in another bowl.
  • Add dry ingredients to wet ingredients in two batches and mix gently.
  • Stir in chopped walnuts.
  • Pour batter into prepared pan.
  • Bake for 55–60 minutes until a toothpick comes out clean.

Notes

Do not overmix the batter to keep the bread soft and tender.
