Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 3 cups fresh spinach
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • salt and black pepper
  • 1/2 cup reserved pasta water

Instructions

  • Cook spaghetti in salted boiling water until al dente. Reserve pasta water and drain.
  • Heat olive oil and sauté garlic until fragrant.
  • Add sun-dried tomatoes and cook briefly to release flavor.
  • Pour in cream, add Parmesan, seasoning, and red pepper flakes. Simmer gently.
  • Add spinach and cook until wilted.
  • Toss spaghetti with sauce, adding pasta water as needed. Season and serve.

Notes

Reserve pasta water to help create a smooth, silky sauce that coats the spaghetti perfectly.
