Ingredients

  • 1.5-2 pounds smoked sausage or kielbasa (sliced)
  • 2 cans red kidney beans (drained and rinsed)
  • 1 large yellow onion (sliced)
  • 1 can condensed beef broth or beef gravy-style soup

Instructions

  • Slice sausage into rounds and slice onion thinly.
  • Optional: Sear sausage in a skillet until lightly browned.
  • Layer onions at the bottom of the slow cooker.
  • Add sausage on top, followed by beans and broth.
  • Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  • Stir, adjust seasoning, and serve hot.

Notes

Sear the sausage before slow cooking for extra flavor, but it can be skipped for convenience.
