Ingredients

  • 3 cups quick cook oats
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter
  • 1.66 cups sugar
  • 0.5 cup milk
  • 0.25 cup cocoa powder
  • 1 cup peanut butter
  • 2 teaspoons vanilla extract

Instructions

  • In a large bowl, stir together oats and salt. Set aside.
  • In a saucepan, whisk butter, sugar, milk, and cocoa. Bring to a boil for 1 minute.
  • Remove from heat and stir in peanut butter and vanilla until smooth.
  • Pour mixture over oats and stir until fully combined.
  • Drop onto wax paper and let cool at room temperature before refrigerating.

Notes

Do not overcook the chocolate mixture and allow cookies to cool at room temperature before refrigerating.
