Ingredients

  • 1 ripe avocado
  • 1 slice whole grain bread
  • fresh spinach
  • salt and black pepper
  • lemon juice (optional)
  • red pepper flakes (optional)
  • 2-3 eggs
  • 1 tbsp milk or cream
  • 1 tsp butter
  • 1 cup strawberries, halved

Instructions

  • Toast bread until golden and crisp.
  • Mash avocado with salt, pepper, and lemon juice, then spread on toast and top with spinach.
  • Whisk eggs with milk, then cook in butter over low heat, stirring slowly until soft and creamy.
  • Prepare strawberries by rinsing and slicing.
  • Serve everything together and garnish as desired.

Notes

Cook eggs on low heat for best texture. Add lemon juice to avocado to prevent browning.
