Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 lb large shrimp, peeled and deveined
  • 3 cups broccoli florets
  • 1 lb green beans
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 0.5 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1.5 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp cayenne pepper
  • salt and black pepper
  • fresh parsley

Instructions

  • Boil potatoes in salted water for 15-18 minutes until tender. Drain and mash with butter and cream until smooth.
  • Season salmon with paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  • Heat olive oil and cook salmon for 3-4 minutes per side until a crust forms and fish flakes easily.
  • In the same pan, melt butter, sauté garlic, then cook shrimp until pink. Add broccoli and green beans and cook until tender-crisp.
  • Serve mashed potatoes topped with salmon and shrimp with vegetables. Garnish with parsley.

Notes

Use Yukon gold potatoes for the best mash texture. Do not overcrowd the pan when cooking salmon or shrimp.
