Ingredients

  • 6 pieces chicken drumsticks
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp paprika
  • 1 to taste salt
  • 1 to taste black pepper
  • 2 cups cooked long-grain rice
  • 1 cup corn kernels
  • 1 tbsp butter
  • 1 tbsp parsley or cilantro, chopped
  • 1/2 tsp chili flakes (optional)

Instructions

  • Preheat oven to 400°F (200°C) and season chicken with oil, garlic, soy sauce, paprika, salt, and pepper.
  • Place chicken on a baking tray and bake for 30 minutes.
  • Brush chicken with honey and extra soy sauce, then bake for another 10 minutes.
  • In a skillet, melt butter and cook corn, then stir in cooked rice and seasonings.
  • Serve chicken with corn rice and garnish with herbs.

Notes

Add lemon juice or sesame seeds for extra flavor and texture.
