Ingredients

  • 4 links smoked sausage
  • 1 tsp olive oil
  • 4 large eggs
  • 2 tbsp milk or cream
  • 1 tbsp butter
  • 1/4 cup cheddar cheese, shredded
  • 2 tbsp cooked bacon, crumbled
  • 2 cups diced potatoes
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 2 pieces waffles
  • 1 tbsp melted butter
  • 1 to taste maple syrup

Instructions

  • Preheat oven to 400°F (200°C). Toss potatoes with oil and seasonings, then roast for 25–30 minutes.
  • Cook sausage in a skillet over medium heat until browned on all sides.
  • Whisk eggs with milk, salt, and pepper. Cook in butter over low heat, then add cheese and bacon.
  • Toast waffles until golden, brush with butter, and drizzle with maple syrup.
  • Plate sausage, eggs, potatoes, and waffles. Garnish and serve warm.
