Instructions
Preheat oven to 400°F (200°C). Toss potatoes with oil and seasonings, then roast for 25–30 minutes.
Cook sausage in a skillet over medium heat until browned on all sides.
Whisk eggs with milk, salt, and pepper. Cook in butter over low heat, then add cheese and bacon.
Toast waffles until golden, brush with butter, and drizzle with maple syrup.
Plate sausage, eggs, potatoes, and waffles. Garnish and serve warm.
