Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 3-4 medium potatoes, peeled and diced
  • 10.5 oz cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 2 tablespoons butter or olive oil

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Cook ground beef and chopped onion in a skillet until browned. Drain excess fat.
  • Boil diced potatoes in salted water for 8–10 minutes until just tender, then drain.
  • In a bowl combine cream of mushroom soup, milk, salt, pepper, and garlic powder.
  • Layer potatoes in the baking dish followed by the beef mixture.
  • Pour the soup mixture over the layers and sprinkle cheddar cheese evenly on top.
  • Dot with butter if desired and bake uncovered for 25–30 minutes until cheese is melted and bubbly.
  • Allow to cool slightly before serving.

Notes

You can substitute cream of chicken soup or add vegetables like corn or peas for extra flavor.
