boneless pork loin roast

dark stout beer

dry onion soup mix
Instructions
Pat the pork loin dry and trim excess hard fat while leaving the fat cap on top.
Place the pork loin in the bottom of the slow cooker with the fat side facing up.
Mix the dark stout beer with the onion soup mix until mostly dissolved.
Pour the stout mixture over and around the pork loin.
Cover and cook on LOW for 7–9 hours or HIGH for 4–5 hours until tender.
Remove pork and let it rest for 10 minutes before slicing.
Skim fat from cooking liquid and cook uncovered on HIGH for 10–15 minutes to thicken if desired.
Slice pork and spoon the stout gravy over the top before serving.
Notes
For deeper flavor brown the pork loin in a hot skillet before placing it in the slow cooker.
