Ingredients

  • 3-3.5 pounds boneless pork loin roast
  • 12 ounces dark stout beer
  • 2 packets dry onion soup mix

Instructions

  • Pat the pork loin dry and trim excess hard fat while leaving the fat cap on top.
  • Place the pork loin in the bottom of the slow cooker with the fat side facing up.
  • Mix the dark stout beer with the onion soup mix until mostly dissolved.
  • Pour the stout mixture over and around the pork loin.
  • Cover and cook on LOW for 7–9 hours or HIGH for 4–5 hours until tender.
  • Remove pork and let it rest for 10 minutes before slicing.
  • Skim fat from cooking liquid and cook uncovered on HIGH for 10–15 minutes to thicken if desired.
  • Slice pork and spoon the stout gravy over the top before serving.

Notes

For deeper flavor brown the pork loin in a hot skillet before placing it in the slow cooker.
