Ingredients

  • 2 salmon fillets
  • 1 pound baby potatoes
  • 1 bunch asparagus, trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon paprika
  • salt and black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  • Preheat oven to 400°F (200°C). Toss potatoes with olive oil, paprika, salt, and pepper.
  • Spread potatoes on a baking sheet and roast for 20 minutes until beginning to crisp.
  • Mix garlic, olive oil, parsley, lemon juice, salt, and pepper in a bowl.
  • Rub the garlic herb mixture over the salmon fillets.
  • Add asparagus to the baking tray and drizzle with olive oil.
  • Place salmon on the tray with the potatoes and asparagus.
  • Bake for 12–15 minutes until salmon is flaky and cooked through.
  • Serve salmon with roasted potatoes and asparagus and drizzle extra garlic herb oil on top.

Notes

Add lemon slices or sprinkle Parmesan on the asparagus for extra flavor.
