Ingredients

  • 1 medium green cabbage (about 2–2½ pounds), thinly sliced
  • 3 large yellow onions, thinly sliced
  • 6 cups vegetable or chicken broth
  • 3 tablespoons butter or vegetable oil

Instructions

  • Slice cabbage into thin shreds and onions into thin half-moons.
  • Place cabbage and onions into the slow cooker and toss lightly.
  • Drizzle butter or oil evenly over the vegetables.
  • Pour broth over the vegetables and gently press them down so most are submerged.
  • Cover and cook on LOW for 7–8 hours or HIGH for 3½–4 hours until cabbage is tender.
  • Stir gently before serving and enjoy hot.

Notes

Add rice, barley, or pasta in the last 30 minutes if you want a heartier soup.
