Ingredients

  • 1 grilled chicken breast, sliced
  • 1 medium sweet potato, cut into wedges
  • 1/2 ripe avocado, cubed
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons red onion, diced
  • 1/2 cup cucumber yogurt sauce or tzatziki
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C). Toss sweet potato wedges with olive oil, paprika, salt and pepper.
  • Roast sweet potatoes on a baking sheet for 25 minutes until golden and crispy.
  • Season chicken with garlic powder, paprika, salt and pepper.
  • Grill or pan-sear chicken for 5 to 6 minutes per side until cooked through.
  • Dice avocado, halve cherry tomatoes and chop red onion.
  • Place roasted sweet potatoes in a bowl and add sliced grilled chicken.
  • Top with avocado, tomatoes, red onion and spoon over tzatziki sauce.
  • Garnish with fresh parsley and serve immediately.

Notes

Add quinoa or brown rice for a heartier bowl. Store sauce separately when meal prepping.
