Ingredients

grilled chicken breast, sliced

sweet potato, cut into wedges

ripe avocado, cubed
1/2

cherry tomatoes, halved

red onion, diced

cucumber yogurt sauce or tzatziki
1
tablespoon
olive oil
1/2
teaspoon
paprika
1/2
teaspoon
garlic powder
salt and black pepper to taste

tablespoon
fresh parsley, chopped
Instructions
Preheat oven to 400°F (200°C). Toss sweet potato wedges with olive oil, paprika, salt and pepper.
Roast sweet potatoes on a baking sheet for 25 minutes until golden and crispy.
Season chicken with garlic powder, paprika, salt and pepper.
Grill or pan-sear chicken for 5 to 6 minutes per side until cooked through.
Dice avocado, halve cherry tomatoes and chop red onion.
Place roasted sweet potatoes in a bowl and add sliced grilled chicken.
Top with avocado, tomatoes, red onion and spoon over tzatziki sauce.
Garnish with fresh parsley and serve immediately.
Notes
Add quinoa or brown rice for a heartier bowl. Store sauce separately when meal prepping.
