Ingredients

  • 2-2.5 pounds thick-cut bone-in pork chops
  • 1/2 cup Dijon mustard or yellow mustard
  • 1/2 cup honey
  • 1/4 cup apple cider vinegar

Instructions

  • Pat the pork chops dry with paper towels and trim excess fat if needed.
  • In a bowl, whisk together mustard, honey, and apple cider vinegar until smooth.
  • Lightly grease the inside of the slow cooker with cooking spray if desired.
  • Arrange pork chops in a single layer in the slow cooker.
  • Pour the honey mustard mixture over the pork chops and turn once to coat.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until pork is tender.
  • Remove pork chops carefully using tongs or a spatula.
  • If desired, cook the sauce uncovered on HIGH for 10–15 minutes until slightly thickened.
  • Spoon the sauce over the pork chops and serve hot.

Notes

Use thick-cut bone-in pork chops for the best tenderness. For a thicker glaze, cook the sauce uncovered on HIGH for 10–15 minutes before serving.
