Instructions
Heat vegetable oil in a skillet over medium to medium-high heat.
Drain canned salmon and place it in a mixing bowl, removing bones if desired.
Add onion, eggs, breadcrumbs, lemon juice, jalapeños, salt, and black pepper.
Mix until well combined and form the mixture into evenly sized patties.
Fry patties in hot oil for about 5 minutes per side until golden brown.
Remove from skillet and drain on paper towels.
Serve warm with lemon wedges or your favorite dipping sauce.
Notes
Serve with tartar sauce, spicy mayo, or lemon wedges for extra flavor.
