Ingredients

  • 1 14.75 oz can pink salmon drained
  • 0.5 onion finely chopped
  • 2 eggs
  • 0.75 cup breadcrumbs
  • 1 tsp lemon juice
  • 1-2 jalapeños finely chopped
  • 0.5 tsp salt optional
  • 0.5 tsp black pepper optional
  • 0.5 cup vegetable oil for frying

Instructions

  • Heat vegetable oil in a skillet over medium to medium-high heat.
  • Drain canned salmon and place it in a mixing bowl, removing bones if desired.
  • Add onion, eggs, breadcrumbs, lemon juice, jalapeños, salt, and black pepper.
  • Mix until well combined and form the mixture into evenly sized patties.
  • Fry patties in hot oil for about 5 minutes per side until golden brown.
  • Remove from skillet and drain on paper towels.
  • Serve warm with lemon wedges or your favorite dipping sauce.

Notes

Serve with tartar sauce, spicy mayo, or lemon wedges for extra flavor.
