Ingredients

  • 1 lb large shrimp peeled and deveined
  • 2 cloves garlic finely minced
  • 1 tbsp cilantro finely chopped
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 1 avocado
  • 0.25 tsp salt
  • 1 tbsp lime juice
  • 1 English cucumber sliced into rounds
  • 1 tbsp extra lime juice for garnish
  • 1 tbsp extra cilantro chopped for garnish

Instructions

  • Pat shrimp dry and place in a bowl with garlic, cilantro, paprika, cayenne pepper, salt, black pepper, and 1 tablespoon olive oil. Toss to coat.
  • Heat remaining olive oil in a skillet over medium-high heat.
  • Cook shrimp for about 2 minutes per side until pink and fully cooked.
  • Mash avocado with lime juice and salt until smooth and creamy.
  • Spread avocado mixture onto cucumber slices.
  • Place one shrimp on top of each cucumber slice.
  • Garnish with lime juice and chopped cilantro before serving.

Notes

Serve immediately or refrigerate up to 4 hours before serving.
