Ingredients

  • 2 lbs ground beef 80/20
  • 1 cup breadcrumbs
  • 2 eggs
  • 0.5 cup milk
  • 0.5 cup onion finely diced
  • 0.5 cup bell pepper finely diced
  • 2 cloves garlic minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp fresh parsley optional
  • 0.75 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 French baguette sliced lengthwise
  • 4 tbsp butter softened
  • 2 cloves garlic minced
  • 1 cup mozzarella cheese shredded
  • 2 tbsp Parmesan cheese grated
  • 1 tbsp chives or parsley chopped

Instructions

  • Preheat oven to 375°F. In a large bowl combine ground beef, breadcrumbs, eggs, milk, onion, bell pepper, garlic, ketchup, Worcestershire sauce, salt, and pepper.
  • Mix gently until just combined and shape the mixture into a loaf in a baking dish.
  • In a bowl mix ketchup, brown sugar, and Dijon mustard then spread over the top of the meatloaf.
  • Bake for 55–65 minutes until internal temperature reaches 160°F.
  • Let the meatloaf rest for 10 minutes before slicing.
  • Mix softened butter with minced garlic and spread over baguette halves.
  • Sprinkle mozzarella and Parmesan over the bread and bake at 375°F for 10–12 minutes until melted.
  • Broil for 1–2 minutes until cheese is golden and bubbly.
  • Slice meatloaf and serve with warm cheesy garlic bread.

Notes

Leftover meatloaf slices make excellent sandwiches the next day.
