Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.25 teaspoon ground cinnamon
  • 4 tablespoons butter, melted
  • 16 oz cream cheese
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 0.75 cup heavy cream
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 4 oz cream cheese (for frosting)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 cup heavy whipping cream
  • 1 teaspoon cinnamon powder (for frosting)

Instructions

  • Preheat oven to 400°F (200°C).
  • Mix graham cracker crumbs, cinnamon, and melted butter.
  • Press the mixture firmly into the bottom of a lined 7-inch springform pan.
  • Beat cream cheese until smooth.
  • Add eggs one at a time and mix well.
  • Add vanilla extract, heavy cream, brown sugar, and cinnamon. Mix until smooth.
  • Pour batter over the crust and smooth the top.
  • Bake for 40 minutes until the center is slightly jiggly.
  • Cool completely and refrigerate for at least 6 hours.
  • Beat frosting ingredients until smooth and fluffy.
  • Spread or pipe frosting over the chilled cheesecake before serving.

Notes

Chill the cheesecake for at least 6 hours for the best texture and flavor.
