Ingredients

  • 1 pound breakfast sausage
  • 4 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Bisquick baking mix

Instructions

  • Preheat oven to 350°F and grease a 12-cup muffin pan.
  • Cook sausage in a skillet over medium-high heat until browned. Drain excess fat.
  • Beat eggs in a large bowl.
  • Add cooked sausage, shredded cheese, and Bisquick mix to the eggs.
  • Stir until well combined.
  • Divide the mixture evenly into muffin cups, filling each about three-quarters full.
  • Bake for 18–20 minutes until golden brown and a toothpick inserted comes out clean.
  • Cool for 5 minutes before removing from the pan.

Notes

Great for meal prep and can be frozen for up to 3 months.
