In a skillet over medium heat, cook the ground pork until fully browned, breaking it apart as it cooks. Drain excess fat if needed.
Stir in the chopped onion and minced garlic. Cook for about 5 minutes until the onion is soft and translucent.
Transfer the pork mixture to the slow cooker.
Add crushed tomatoes and Italian seasoning. Stir until well combined.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until rich and flavorful.
Taste and adjust salt if needed. Serve over cooked pasta and top with grated Parmesan.
Notes
For extra richness, stir in a splash of heavy cream at the end. Add red pepper flakes for heat or finely diced carrots and celery for additional depth.
