Ingredients

  • 6 cups cubed potatoes
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste black pepper
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped scallions

Instructions

  • Peel and cube the potatoes into bite-sized pieces.
  • In a large bowl, mix sour cream, mayonnaise, milk, garlic powder, salt, and pepper until smooth.
  • Add the cubed potatoes and stir until evenly coated.
  • Lightly grease the inside of the slow cooker.
  • Spread half of the potato mixture into the slow cooker and sprinkle with half of the shredded cheddar cheese.
  • Add the remaining potato mixture and top with the rest of the cheese.
  • Cover and cook on low for 4–6 hours until the potatoes are tender.
  • Just before serving, sprinkle with cooked bacon and chopped scallions. Serve warm.

Notes

For extra richness, add 4 ounces of softened cream cheese to the sour cream mixture. For a vegetarian version, omit bacon and add sautéed mushrooms.
