shredded cheddar cheese

sour cream

mayonnaise
1/4

milk

garlic powder
to taste

cooked and crumbled bacon
1/4
cup
chopped scallions
Instructions
Peel and cube the potatoes into bite-sized pieces.
In a large bowl, mix sour cream, mayonnaise, milk, garlic powder, salt, and pepper until smooth.
Add the cubed potatoes and stir until evenly coated.
Lightly grease the inside of the slow cooker.
Spread half of the potato mixture into the slow cooker and sprinkle with half of the shredded cheddar cheese.
Add the remaining potato mixture and top with the rest of the cheese.
Cover and cook on low for 4–6 hours until the potatoes are tender.
Just before serving, sprinkle with cooked bacon and chopped scallions. Serve warm.
Notes
For extra richness, add 4 ounces of softened cream cheese to the sour cream mixture. For a vegetarian version, omit bacon and add sautéed mushrooms.
