Ingredients

  • 1 lb Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 14.5 oz diced tomatoes, undrained
  • 9 oz refrigerated cheese tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional)

Instructions

  • Brown sausage in a skillet over medium heat, breaking into crumbles. Drain excess grease.
  • Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  • Transfer sausage mixture to the slow cooker.
  • Add chicken broth, diced tomatoes, basil, and oregano. Stir well.
  • Cook on LOW for 6 hours or HIGH for 3 hours.
  • Stir in tortellini, heavy cream, and spinach 30 minutes before serving.
  • Continue cooking on LOW for 30 minutes until tortellini is tender.
  • Season with salt and pepper. Serve hot topped with grated Parmesan.

Notes

For a lighter version, substitute half-and-half for heavy cream. For thicker soup, add 2–3 tablespoons cream cheese at the end.
