Ingredients

  • 2 lbs chicken thighs or pork roast
  • 4 cups chicken or vegetable broth
  • 4 cups chopped carrots and potatoes
  • 1 tsp salt and pepper

Instructions

  • Place the protein in the bottom of the slow cooker.
  • Add chopped vegetables around and on top of the meat.
  • Pour broth over the ingredients until just covered and season with salt and pepper.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until meat is tender.

Notes

Add garlic or herbs for extra flavor. For thicker gravy, stir in a cornstarch slurry during the final 15 minutes of cooking.
