Ingredients

  • 2 cups dry green or brown lentils
  • 2 cups chopped carrots
  • 1 large onion, chopped
  • 6 cups vegetable or chicken broth

Instructions

  • Rinse the lentils thoroughly under cold water and check for debris.
  • Place the lentils into the slow cooker.
  • Add chopped carrots and onion on top of the lentils.
  • Pour broth over the ingredients until covered by about one inch.
  • Season lightly with salt and pepper if desired.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until lentils and vegetables are tender.
  • Stir gently before serving and adjust thickness with additional broth if needed.

Notes

Use green or brown lentils for best texture. Adjust broth for desired thickness. Add garlic, bay leaf, olive oil, or lemon juice for extra flavor if desired.
