Instructions
Preheat oven to 350°F (175°C) and prepare muffin tin.
Whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.
Mix egg, milk, vanilla, and melted butter until smooth.
Gently combine wet and dry ingredients until just mixed.
Fill muffin cups two-thirds full and bake 20–25 minutes.
Cool 5 minutes, dip in melted butter, then roll in cinnamon sugar.
Notes
Do not overmix the batter to keep muffins light and fluffy. Coat while warm for best results.
