Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 cup milk
  • 1/2 cup butter, melted and cooled
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)
  • 1/4 cup butter, melted (for topping)

Instructions

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • Mix egg, milk, vanilla, and melted butter until smooth.
  • Gently combine wet and dry ingredients until just mixed.
  • Fill muffin cups two-thirds full and bake 20–25 minutes.
  • Cool 5 minutes, dip in melted butter, then roll in cinnamon sugar.

Notes

Do not overmix the batter to keep muffins light and fluffy. Coat while warm for best results.
