Ingredients

  • 2-2.5 lbs boneless, skinless chicken breasts or thighs
  • 8 oz cream cheese, cubed
  • 1 can (10.5-15 oz) cream of chicken soup or ranch-style cooking sauce

Instructions

  • Lightly grease the slow cooker insert to prevent sticking.
  • Place the chicken in an even layer at the bottom of the slow cooker.
  • Pour the cream of chicken soup evenly over the chicken.
  • Add the cubed cream cheese on top of the chicken and soup mixture.
  • Cover and cook on LOW for 4-5 hours or HIGH for 2.5-3 hours until the chicken is fully cooked and tender.
  • Shred the chicken with two forks directly in the slow cooker and stir until the sauce becomes smooth and creamy.
  • If the sauce is too thick, add a splash of milk or broth and stir to reach the desired consistency before serving.

Notes

If the sauce becomes too thick after cooking, add a splash of milk or chicken broth and stir until smooth. Full-fat cream cheese creates the creamiest texture.
