Ingredients

  • 1.5 lb boneless, skinless chicken breasts or thighs
  • 1.5 cups bottled creamy Italian dressing
  • 8 oz cream cheese, cubed
  • 12 oz cooked short pasta (penne, rotini, shells)

Instructions

  • Place the chicken in an even layer in the bottom of your slow cooker.
  • Pour the creamy Italian dressing over the chicken so it’s lightly coated.
  • Cover and cook LOW for 4–5 hours or HIGH for 2–3 hours until the chicken is very tender and easily shreds with a fork.
  • About 30 minutes before serving, add the cubed cream cheese. Cover and let it soften 10–15 minutes, then stir until melted into a smooth sauce.
  • Shred the chicken with two forks and mix it into the creamy sauce.
  • Cook pasta separately until just al dente. Drain and fold into the sauce in the slow cooker.
  • Let sit on WARM for 5–10 minutes, then season with salt and pepper to taste.

Notes

Add veggies like peas or spinach for extra nutrition. Adjust sauce thickness with pasta water.
