Ingredients

  • 3-4 lb beef roast (chuck or rump)
  • 4 large carrots, cut into chunks
  • 4-5 medium potatoes, peeled and quartered
  • 1 large onion, sliced
  • 1 cup beef broth
  • 2 Tbsp Worcestershire sauce (optional)
  • 2 tsp garlic powder
  • 1 tsp dried thyme or rosemary
  • to taste salt and pepper (optional)

Instructions

  • Place the beef roast in the bottom of the slow cooker.
  • Arrange carrots, potatoes, and sliced onion around the roast.
  • Pour beef broth and Worcestershire sauce over the roast and vegetables.
  • Sprinkle garlic powder, dried thyme or rosemary, salt, and pepper evenly over the top.
  • Cover and cook on LOW for 8-10 hours or HIGH for 4-6 hours until fork-tender.
  • Remove the roast, slice or shred, and spoon cooking juices over before serving.

Notes

Cook on LOW for best tenderness. Leftovers taste even better the next day. Add mushrooms or thicken juices for gravy if desired.
