Ingredients

  • 2 lbs beef roast or stew meat
  • 1 packet (0.87 oz) brown gravy mix
  • 1 cup beef broth
  • 1 large onion, sliced
  • 4 carrots, chopped
  • to taste salt and pepper

Instructions

  • Place the beef roast or stew meat in the bottom of the slow cooker.
  • Add sliced onions and chopped carrots on top of the beef.
  • In a bowl, whisk together the brown gravy mix and beef broth until smooth.
  • Pour the gravy mixture evenly over the beef and vegetables.
  • Season with salt and pepper if desired. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until the beef is tender.
  • Serve hot with gravy spooned over mashed potatoes, rice, or egg noodles.

Notes

Add peas or green beans in the last hour of cooking for extra vegetables. For thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in during the final 20 minutes.
