Ingredients

  • 2–3 lb boneless, skinless chicken breasts or thighs
  • 1.5 cups uncooked long-grain rice
  • 10.5 oz cream of chicken soup
  • 2.5 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt & pepper
  • 1–2 cups optional frozen peas or mixed vegetables

Instructions

  • Place chicken in slow cooker and sprinkle rice around it.
  • Spoon cream of chicken soup over chicken and rice.
  • Pour chicken broth over everything.
  • Season with garlic powder, onion powder, salt, and pepper.
  • Cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is cooked and rice is tender.
  • If using vegetables, stir them in 30 minutes before serving.
  • Shred chicken and return to slow cooker. Stir together and serve.

Notes

Set and forget slow cooker recipe. Add optional vegetables and cheese for variety.
