Ingredients

  • 4-6 medium Russet or Yukon Gold potatoes
  • 2-3 tablespoons olive oil or butter
  • 1-2 teaspoons salt
  • 1/2-1 teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon paprika (optional)
  • 2-3 sprigs fresh rosemary or thyme (optional)

Instructions

  • Wash and scrub the potatoes thoroughly. Dry completely with a towel.
  • Rub each potato with olive oil or butter. Season generously with salt, pepper, and optional spices.
  • Wrap each potato tightly in heavy-duty foil, sealing edges completely.
  • Place foil-wrapped potatoes in the slow cooker in a single layer, stacking slightly if necessary.
  • Cook on LOW for 6–8 hours or HIGH for 3–4 hours until fork tender.
  • Carefully unwrap and serve with desired toppings such as butter, sour cream, cheese, or chives.

Notes

Choose potatoes of similar size for even cooking. For a cheesy finish, unwrap and broil with cheese for 2–3 minutes after slow cooking.
