Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1.5 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 2 cloves garlic, minced
  • to taste salt & black pepper
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons grated Parmesan (optional)

Instructions

  • Caramelize onions with butter, olive oil, salt, and pepper over medium heat for 20–25 minutes.
  • Add garlic and thyme; cook 1 minute. Stir in beef broth and Worcestershire sauce.
  • Stir in Gruyère (and Parmesan if using) until melted.
  • Place chicken in slow cooker, season lightly, and pour onion mixture over chicken.
  • Cook on LOW 4–5 hours or HIGH 2½–3 hours until chicken is tender.
  • Serve chicken with sauce over mashed potatoes, noodles, or crusty bread.

Notes

Optional Parmesan can be added for extra flavor.
