Instructions
Preheat oven to 375°F and line two sheet trays with parchment paper.
Warm refried beans with 1/4 cup water in a small saucepan until bubbling. Let cool slightly.
Heat olive oil in a skillet and cook ground beef with taco seasoning until browned.
Spread each tortilla chip with warm beans. Top with cooked beef and sprinkle with cheese.
Bake 6–8 minutes until cheese is fully melted.
Remove from oven and gently fold each chip into a mini taco.
Serve warm with salsa and sour cream.
Notes
Fold gently while warm to avoid cracking.
