Ingredients

  • 24 tortilla chip rounds
  • 2 tbsp olive oil
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 cup refried beans
  • 8 oz Colby cheese, grated
  • Salsa, for serving
  • Sour cream, for serving

Instructions

  • Preheat oven to 375°F and line two sheet trays with parchment paper.
  • Warm refried beans with 1/4 cup water in a small saucepan until bubbling. Let cool slightly.
  • Heat olive oil in a skillet and cook ground beef with taco seasoning until browned.
  • Spread each tortilla chip with warm beans. Top with cooked beef and sprinkle with cheese.
  • Bake 6–8 minutes until cheese is fully melted.
  • Remove from oven and gently fold each chip into a mini taco.
  • Serve warm with salsa and sour cream.

Notes

Fold gently while warm to avoid cracking.
