Ingredients

  • 3 lb sirloin tip roast, cut into 1–1½-inch slices or chunks
  • 10.5 oz condensed cream of mushroom soup
  • 1 oz dry onion soup mix packet
  • 1 cup beef broth

Instructions

  • Pat the sirloin pieces dry with paper towels.
  • Place the beef evenly in the bottom of the slow cooker.
  • In a bowl, whisk together the condensed cream of mushroom soup, dry onion soup mix, and beef broth until smooth.
  • Pour the sauce evenly over the beef, nudging it between pieces to coat.
  • Cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is fork-tender.
  • If desired, thicken with a cornstarch slurry 20 minutes before serving or thin with extra broth.

Notes

For deeper flavor, sear the beef before slow cooking. Adjust gravy thickness with broth or cornstarch slurry as needed.
