Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika or black pepper
  • 1 cup milk
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1.75 cups shredded cheddar cheese

Instructions

  • Preheat oven to 375°F and line or grease a muffin tin.
  • Whisk flour, baking powder, salt, and seasonings in a large bowl.
  • Whisk milk, melted butter, and eggs in a separate bowl until smooth.
  • Gently stir wet ingredients into dry ingredients until just combined.
  • Fold in most of the cheddar, reserving some for topping.
  • Fill muffin cups two-thirds full and sprinkle with remaining cheese.
  • Bake for 15–18 minutes until golden and a toothpick comes out clean.

Notes

Do not overmix the batter to keep the muffins light and tender.
