Instructions
Preheat oven to 375°F and line or grease a muffin tin.
Whisk flour, baking powder, salt, and seasonings in a large bowl.
Whisk milk, melted butter, and eggs in a separate bowl until smooth.
Gently stir wet ingredients into dry ingredients until just combined.
Fold in most of the cheddar, reserving some for topping.
Fill muffin cups two-thirds full and sprinkle with remaining cheese.
Bake for 15–18 minutes until golden and a toothpick comes out clean.
Notes
Do not overmix the batter to keep the muffins light and tender.
