Ingredients

  • 3 lb potatoes, peeled and cut into chunks
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 0.5 cup chicken or vegetable broth
  • 4 tbsp unsalted butter, cut into pieces
  • salt, to taste
  • black pepper, to taste
  • 0.25 cup fresh parsley, chopped (optional)
  • 3 tbsp heavy cream or sour cream (optional)

Instructions

  • Peel and cut the potatoes into chunks. Slice the onion and mince the garlic.
  • Place potatoes, onion, and garlic in the slow cooker. Scatter butter on top.
  • Pour in the broth and season with salt and black pepper.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until very tender.
  • Stir in cream or sour cream if using. Adjust seasoning and garnish with parsley before serving.

Notes

Add cream or sour cream at the end for extra richness. Yukon Gold potatoes hold their shape best.
