Instructions
Bring a large pot of water to a boil. Add pearl onions and blanch for 2 minutes. Drain and transfer to an ice bath, then trim ends and remove skins.
Melt butter in a saucepan over medium heat. Stir in flour and cook 2–3 minutes until lightly golden.
Gradually whisk in milk and cream. Simmer gently until the sauce thickens.
Season with nutmeg, salt, and white pepper. Add onions and simmer 15–20 minutes until tender.
Remove from heat, garnish with parsley, and serve warm.
Notes
Serve warm and garnish with fresh parsley for best flavor.
