Ingredients

  • 2 lbs pearl onions, peeled
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.5 tsp ground nutmeg
  • salt, to taste
  • white pepper, to taste
  • fresh parsley, chopped

Instructions

  • Bring a large pot of water to a boil. Add pearl onions and blanch for 2 minutes. Drain and transfer to an ice bath, then trim ends and remove skins.
  • Melt butter in a saucepan over medium heat. Stir in flour and cook 2–3 minutes until lightly golden.
  • Gradually whisk in milk and cream. Simmer gently until the sauce thickens.
  • Season with nutmeg, salt, and white pepper. Add onions and simmer 15–20 minutes until tender.
  • Remove from heat, garnish with parsley, and serve warm.

Notes

Serve warm and garnish with fresh parsley for best flavor.
