Instructions
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
In a large bowl, combine hash browns, diced ham, 1½ cups cheddar cheese, sour cream, soup, milk, and optional veggies. Stir until well combined. Season with salt and pepper.
Spread mixture evenly into prepared baking dish.
Mix crushed crackers with melted butter in a small bowl.
Sprinkle crumb mixture evenly over casserole. Top with remaining ½ cup cheddar cheese.
Bake for 45–50 minutes until bubbly, top is golden brown, and hash browns are tender.
Let cool 5–10 minutes before serving.
Notes
Thaw hash browns fully to avoid a watery casserole. Optional vegetables add flavor and texture.
