Ingredients

  • 30 oz Frozen shredded hash browns, thawed
  • 2 cups Cooked ham, diced
  • 2 cups Shredded cheddar cheese (divided: 1½ cups for the mix, ½ cup for topping)
  • 1 can Condensed cream of chicken soup
  • 1 cup Sour cream
  • ½ cup Milk
  • ½ cup Diced onions (optional)
  • ½ cup Diced green bell peppers (optional)
  • to taste Salt and pepper
  • 1 cup Crushed buttery crackers or seasoned breadcrumbs
  • 2 tbsp Melted butter

Instructions

  • Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  • In a large bowl, combine hash browns, diced ham, 1½ cups cheddar cheese, sour cream, soup, milk, and optional veggies. Stir until well combined. Season with salt and pepper.
  • Spread mixture evenly into prepared baking dish.
  • Mix crushed crackers with melted butter in a small bowl.
  • Sprinkle crumb mixture evenly over casserole. Top with remaining ½ cup cheddar cheese.
  • Bake for 45–50 minutes until bubbly, top is golden brown, and hash browns are tender.
  • Let cool 5–10 minutes before serving.

Notes

Thaw hash browns fully to avoid a watery casserole. Optional vegetables add flavor and texture.
