Ingredients

  • 1.5 lb chicken breast or thighs, cut into chunks
  • 2 cup pineapple chunks, drained
  • 0.5 cup teriyaki sauce
  • 1 cup bell pepper or mixed vegetables
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 0.5 tsp salt and black pepper

Instructions

  • Preheat oven to 400°F (200°C).
  • Lay out large sheets of foil and add chicken, pineapple, vegetables, and onion.
  • Drizzle olive oil and teriyaki sauce over ingredients. Season with salt and pepper. Toss gently.
  • Fold foil tightly to seal packets.
  • Place packets on baking sheet and bake 25–30 minutes until chicken is cooked through.
  • Carefully open packets, stir, and serve.
