Ingredients

  • 3 large sweet onions, sliced
  • 4 tablespoons butter
  • 1 cup evaporated milk
  • 2 large eggs
  • 1 1/2 cups shredded cheese
  • 1 cup Ritz crackers, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Melt butter in a skillet and cook onions slowly until soft and lightly caramelized.
  • Whisk evaporated milk, eggs, salt, and pepper in a bowl.
  • Spread onions in a greased baking dish and sprinkle with cheese.
  • Pour the milk mixture over the onions.
  • Top with crushed crackers and dot with extra butter if desired.
