Instructions
Melt butter in a skillet and cook onions slowly until soft and lightly caramelized.
Whisk evaporated milk, eggs, salt, and pepper in a bowl.
Spread onions in a greased baking dish and sprinkle with cheese.
Pour the milk mixture over the onions.
Top with crushed crackers and dot with extra butter if desired.
Bake at 350°F for 35–40 minutes until set and golden.
Let rest 10 minutes before serving.
