Instructions
Add diced potatoes and broth to a large pot. Bring to a simmer and cook until potatoes are very tender.
Mash some of the potatoes or blend part of the soup to thicken it.
Stir in butter, milk or cream, salt, and pepper. Simmer gently until smooth and creamy.
Stir in bacon, cheese, and ham if using. Heat until cheese melts.
Serve hot and top with sour cream, green onions, and extra cheese or bacon.
Notes
This soup is very forgiving. Adjust toppings and thickness to your taste. Reheat gently and add extra milk or broth if needed.
