Ingredients

  • 2 cups active sourdough starter
  • 2 large eggs
  • 1/4 cup coconut oil, melted
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1 tsp baking soda

Instructions

  • Whisk sourdough starter, eggs, coconut oil, honey, and salt until smooth.
  • Gently stir in baking soda and allow the batter to foam.
  • Heat coconut oil in a skillet over medium heat and pour batter into pancakes.
  • Cook until bubbles form and edges set, then flip.
  • Cook the second side until golden and cooked through.

Notes

Add baking soda just before cooking for maximum fluffiness.
